Every new green coffee we bring in gets tested on a small sample roaster first. We brew it, taste it, and see what we have to work with. We spend a lot of time at the cupping table adjusting variables until the coffee tastes exactly how we want it. It’s a lot of trial and error, but that’s how you build a reliable daily drinker.
